Ingredients

Pizza Dough From Starter

Garlic Aioli

2 cups shredded mozzarella cheese (mixed with Edom if desired)

2-3 cups sliced and cooked mushrooms

Olive oil

Chives, snipped


4 onions (usually sweet, but use what you want)

2 tablespoons extra virgin olive oil

1 tablespoons butter

1/2 teaspoon sugar

1/2 teaspoon kosher salt


18-inch pizza pan or pizza screen

Description

You can make things faster for yourself the day you bake the pizzas by preparing the toppings the day you make the dough and putting them in the refrigerator.

Directions

Make your dough according to the directions for pizza dough, but divide it into two even balls when you are ready for that step.

Prepare your onions:
Cut off both ends up to the "flatter" part. Cut in half and peel. Turn the onion so that you are looking at the rings. Cut from the side into thin slices. Discard any particularly big pieces that survive.

In a thick-bottomed pot, heat olive oil on medium heat. (Adjust the heat as needed to prevent your onions from just burning to your pan). Add the onions and toss to coat with the olive oil. Add salt.

Cook the onions, stirring often, until they have softened, about 15 minutes.

Add the butter and cook, stirring often, until the onions start to brown, about 15 minutes more.

Sprinkle with the sugar. Continue to cook, stirring often, until the onions are caramelized, about 15 minutes more.

Heat your oven to 425 without a pizza stone and 450 with a pizza stone.

Pull the dough out of the fridge.

Prepare the pizza:
Prepare one pizza at a time. Flatten out your dough and place it on a large pizza screen or pizza pan. Brush it with olive oil. Top with the onions, mushrooms, and a sprinkling of chives. Sprinkle with cheese or lay on cheese slices.

Bake for 20-22, minutes.

Move to a cutting board. Drizzle the whole pizza or served slices with the aioli.
